Happy Independence Day!

Tomorrow we celebrate our nation's birthday. For most, this means food, fun, and fireworks with loved ones. It's always been a special holiday for me, being so close to my birthday. It sometimes felt like a big party for me, with a great light show at the end. I loved laying under the stars and looking up at the night sky as it lit up with fantastic fireworks. I love that all of my boys are as mesmerized as I am by the sight of it. I still love to celebrate Independence Day, but July is a busy month now in our lives. In addition to my birthday, we now celebrate Noah's birthday, and our wedding anniversary in July. So, sometimes I don't get to take in the 4th quite as much as I'd like, but I'm going to try to do so this year. Hopefully the weather cooperates, so we'll get to take in another great fireworks show this year!

I decided to make a simple, but pretty banner this year for my fireplace, to help the house look more festive amongst all the dinosaur decorations currently set up for Noah's birthday parties! Haha! If you're also in need of some last minute decorations, you can download this PDF printable for free by clicking here! Just print on cardstock, trim the flags, and hang from some jute/yarn/ribbon. I attached my flags with mini clothespins, but you could also punch holes in them and thread the jute through the flags. A simple, beautiful way to bring the flag into your home for the holiday.

Mother's Day 2014

I can hardly believe it's my sixth Mother's Day already! I consider myself pretty fortunate to be the mother to these three amazing little guys and sweet fur girl! :)


Here's a fun look back at my first five Mother's Days! :)


So as I was scrolling through Facebook the other day while nursing the tiny one, I saw a cute Mother's Day card (All About Mom) that a friend's preschooler made. It was a fill-in-the-blank form where the child answers questions about their mother. I thought it was a fun idea, so out of curiosity, I wanted to see what my boys had to say about me! ;) I put their answers in bold and italics.

Ethan:

My mom is five feet tall and weighs about five pounds. Her hair is brown and her eyes are blue.

My mom's favorite colors are pink, blue and gray, and her favorite food is salad. Her favorite place to eat is Chick-Fil-A. On the weekends, my Mom likes to sit and rest.

My mom is the happiest when we play outside. You are special to me because you're my mommy.


Noah:

My mom is really tall and weighs about three pounds. Her hair is brown and her eyes are blue.

My mom's favorite color is pink and her favorite food is tacos. Her favorite place to eat is Chick-Fil-A. On the weekends, my Mom likes to get dessert.

My mom is the happiest when we play with toys. You are special to me because I just love you.

I guess I need to thank my kids for thinking I'm so skinny! Haha! I think perhaps they just have no concept of weight yet. ;) They do know their colors though! And they did a good job knowing my favorite ones. I don't know about salad and tacos as my favorites, but I do like them. :) While Chick-Fil-A may not top my list as favorite-favorite, it is my favorite "fast-food" place to go! My favorite answer has to be what they both came up with for what I like to do on weekends! LOL!! They are both right, I love resting and I love getting dessert, too! Haha! They are too sweet and I was right, this was super fun!!


They brought home super cute gifts that they made at preschool.

Menu Monday #42

We spent a lot of time at home again this past week. With the threat of snow looming, schools preemptively canceled classes on Wednesday. The snow finally started falling at 1 pm, so they really could have gone to school that day for at least a 1/2 day. Sigh. Once the snow started falling, though, it just kept coming all day, and night. We ended up getting at least 7-10" total, so school was cancelled for the rest of the week. We kept busy at the house reading, watching Caillou, and playing in the snow with Daddy! Sadly, that meant the boys missed their Valentine's Day parties at school on Thursday, but Ethan will have his today, and Noah will have his tomorrow.

The snow plow actually made its way through here this time, though, and we weren't trapped in the house for days like we were last time. Regardless, we ended up staying in Friday night and cooking here, to avoid the crowds at restaurants for Valentine's Day. I made my guys some special heart-shaped grilled cheese sandwiches (yay for no crusts! haha!) and tomato soup. For dessert, chocolate-covered strawberries and marshmallows. Yum!! Josh surprised me with a dozen gorgeous red roses! Thanks, sweetie! :)

On Saturday morning, we were in a hurry to get to a birthday party, so it was a cereal day. For dinner, we tried a new restaurant, The Peerless. We started with the flaming cheese. The boys enjoyed watching as they set it ablaze table side! I had a bowl of my favorite soup, lobster bisque. It had good flavor, but lacked the nice big chunks of lobster meat that I love. For my main course, I had a filet with a baked crumb & walnut apple on the side. It was delicious and the steak was cooked perfectly. Josh had the prime rib with sautéed sherry mushrooms. He enjoyed both. It was a nice evening out with my guys.

On Sunday morning, we were up with plenty of time before church, so I made one more Valentine's Day treat for my guys. Red velvet pancakes with a cream cheese topping. Heavenly! The boys must have enjoyed them, because they each gobbled up 3 pancakes!! I used a simple Bisquick base, then added some cocoa, sugar, and Red Velvet bakery emulsion for flavor and color. For the topping, I softened some cream cheese and added powdered sugar and vanilla extract.


Sunday: Out to eat
Yong Asian House - I had chicken and steak teriyaki with steamed rice and sautéed onion and zucchini. Yum!

MondayAlmond crusted tilapia, brown rice, roasted asparagus
This is a tasty new fish dish that we tried at the beginning of the year. The crispy almond/breadcrumb mixture paired with the richness of the butter and oil is delicious, and perfect on this light, flaky fish.

TuesdayHoney mustard baked chicken tenders, smashed potatoes with parmesan gremolata, roasted broccoli
We've only had these chicken tenders once, but they had great flavor, so I'll make them again. This time I'm going to try this new recipe for smashed potatoes that sounds good! Broccoli will round out the plate.

WednesdaySeared pork chops, roasted butternut squash, toasted pine nut couscous with cranberries
Yes, my favorite pork meal again. I should probably try something new, but the boys do such a great job eating this one, and it's so easy, that it finds its way into the rotation often! ;)

Thursday: Tomato basil pasta
We all love this simple, yet flavorful, pasta dish. I may try adding some grilled chicken strips this time to get some protein.

Friday: On the road
We'll be on our way to my sister's house, so we'll be stopping to eat somewhere on the way.

Saturday: TBD
We'll be celebrating my niece's 2nd birthday! :)

Happy Valentine's Day {free printable}



Valentine, you make my heart glow! (singing in head, "Wild thing, you make my heart sing!") Hehe!


Isn't this adorable?!? I had discovered this super cute idea for valentines via Pinterest (of course!), on this blog. So, when I found glow sticks in the Target dollar spot (15 for $1!!), I decided this would be the perfect, fun valentine for the boys this year! With a total of 26 classmates between the two of them (I guess this number probably won't be getting any lower though!), and after spending a good chunk of change on Christmas treats for their preschool friends, it was nice to save some money with these. :)


So, I designed the tags, printed them on 120# cover, cut them out, punched holes in the sides, and threaded the glow sticks in! Quick and easy!


Now, they are all ready for the boys' Valentine's Day parties at school tomorrow...unless the snow cancels on us again! :/ The blog that inspired these valentines offers a printable, but it would need to be printed on colored paper. Since I wanted to be able to print on white cover, I made a colored printable. If you're still in need of some cute valentines for your kiddos, feel free to click the print button below to print this 8.5"x11" page! :) You will need to view the PDF from a desktop or laptop computer. It will not load on a mobile device. I have this PDF available in my Etsy shop, with editable PDF fields for typing your child's name in before printing! :)



So, that's all I've got for you this year. Nothing super exciting, like three years ago around Valentine's Day, when we announced that we would be having a second little boy...


Or like last year, when we announced that we were expecting our third baby!

Merry Christmas 2013!

Merry Christmas to you and yours, from the Seeley family!


Here is our update for the year. :)


We did manage to get a visit in with Santa again this year at the mall. The boys were definitely very into that this year and eager to ask him for what they wanted! Haha!

When did they get so big?!?

The boys had their Christmas program at preschool last week. Too stinkin' sweet. Ethan was a donkey in the nativity scene. He may have looked more like a dog, but that's ok. ;)

The first day, Ethan hid in the back, so we didn't get the best pics of him. And though Noah did manage to stand up there in front of everyone (without hugging tightly to his teacher's leg! LOL!), he kept turned to the side the entire time, so this was the best shot we got of him, before he turned. Haha!

They thoroughly enjoyed the Christmas cookies after the program, which made it all worth it for them! Haha!



Ethan participated in both days of the program, since he goes to school every day, so the next day, he did a better job staying closer to the front so that we could see him. We watched as he sang all of the words and did all of the hand motions, too! :) What a difference a year makes!! I love the last pic, where they are singing, "Let's all do a little jumping, let's all do a little jumping, let's all do a little jumping, and spread Christmas cheer!"

He had no problems performing on stage this year! :)

I decided to make Christmas gifts for their preschool friends again this year. I was inspired by this pin to create my own little tags to add to the treat bags, stuffed with Hershey's kisses and a tube of Lipsmacker.

The treat bags were a pretty quick, easy thing to make, which is good, since I had 32 of them to do!! Yikes! I love plays on words, so this one definitely appealed to me. :)

I wanted to make something cute for their teachers, too, but ran out of time trying to find the supplies that I needed. So, I settled with Target gift cards. When I saw the red envelopes they gave me to put them in, I was inspired to create little Santa belts out of them. This was super easy, but made for a super cute gift! I completed them with little chalkboard tags that I found in the dollar section at Target. Unfortunately, chalk didn't work well on them (go figure), but I had a silver metallic Permanent marker that worked perfectly! I love the result!

I think that starting a bit earlier than the day before handing them out might be a good idea next year! Haha!

We had lots of fun again this year with Rusty, our elf. You can check out all of his antics on this page, if you'd like! He left good reports for the boys, and they were placed on the "nice" list. :)

They made the nice list for good behavior, but he gave them some things to work on, too. ;)

Santa brought them the toys they haven't stopped talking about this past month...a "double helicopter" for Ethan, and a firetruck for Noah! Amos couldn't ask for a Johnny jump-up, but he loves trying to jump while standing on us, so I figured it'd be a hit. ;) Daisy has enjoyed her Cincinnati football rope toy, so I think we did ok with that one, too.

Time to Carve!

It's my favorite time of year. Cooler weather, the beautiful colors of leaves changing, roasting marshmallows around the fire pit...and pumpkins, of course! Not only do I love making everything I can with pumpkin purée (pancakes, muffins, cookies, cake pops, pumpkin crunch, etc - check out my recipes tab!)...we also love carving them!

This past weekend, we took the boys to a local church's pumpkin patch to pick their pumpkins. They had tons of beautiful ones! The boys had so much fun running around and checking out all of the pumpkins before selecting the ones they wanted to buy. Sorry for the poor quality iPhone pics. I didn't bring the good camera and it was really dark, so they don't look great.

Cleaning out the pumpkins went much better this year than it did two years ago...you can check out that funny video here! Wow, Ethan looks so young there!!

This year, we got fancy with our pumpkins and used Pumpkin Masters carving kits to help us out. You can find the kits at your local grocery, drug, or craft store, or at Walmart or Target. I love these kits because I know the boys can safely use the tools for carving, and we can avoid any dangerous situations with kitchen knives!

Noah chose a ghost template for his pumpkin. It was super easy to use! You just tape the template onto the pumpkin as directed, then trace the outline with the pounce wheel. This pokes little dots into the surface of the pumpkin.



After removing the template, you just follow those dotted lines to carve out the correct areas on the design.

Noah was so proud of his pumpkin! :)

It will look great all lit up on Halloween night! Pumpkin Masters also has strobe lights that you can place inside your pumpkins so that you don't have to use a candle. With the little ones, this is a great, safe alternative!

We had such a great time carving our pumpkins! We want to get more this weekend to carve before Halloween. With all of the templates and tools, there are so many great designs we would like to try!

Menu Monday #34

We enjoyed another week of having Josh off of work. Sadly, he's back at work today, and we were back to waking up to alarm clocks. :( Grandpa and Grandma Seeley and Uncle Jared visited for a couple days at the beginning of the week, then it was time for the Christmas decorations to disappear for the year. It's bittersweet. I love gazing at the lit-up tree in the evenings (it's always magical to me!), but I hate swatting at little hands all day as they try to remove ornaments for the gazillionth (yeah, that's a word - it's like 100 trillion?) time. This year, the tree kind of had to go, so we would have room for all the new toys the boys have! It's kind of ridiculous. They were spoiled rotten between all 3 Christmases this year!

The feast I made for New Year's Eve was fabulous! I was very happy with how the mini pizzas turned out. I will make those again. They are a great way for guests to be able to customize their toppings if you decide to do a pizza bar. That could be a fun option for a winter party, when you can't fire up the grill! The star of the night had to be the crabmeat appetizers though, but I was also equally impressed with the cranberry cream cheese crostini. I had no idea what to expect with this recipe, but I couldn't have been more pleased with the results. They were heavenly and I will definitely make them again because they were fairly quick and easy to make, too! I also discovered that the extra cranberry mixture makes a delicious salsa for corn chips! Yum. So, in Sesame Street fashion, the letter of the day must have been C...crabmeat appetizers; mini pizzas with chorizo, red onion and cilantro; Caprese skewers; and cranberry cream cheese crostini! Whew!





On New Year's Day, our Caribbean Jerk pork roast was delicious, as usual, but surprising to me, I actually really liked the sautéed red cabbage (a Rachael Ray recipe) that Josh made. In the past, I have tried preparing it other ways, and I was never a fan. But the flavors that he used this time were great (for the recipe, he used whole grain mustard instead of mustard seed), and the final dish was a good one. I would definitely make it for dinner if I could get the kids to eat it!


On Friday, we decided to check out our local fossil museum, as it's just down the road from our house. Ethan went in October with Uncle Mike and cousins Jacob and Rachel, and he kept telling us he wanted to go with us too, so we decided to check it out after naptime. The boys had a good time, especially when they got to dig for fossils. :)



 

After we were done there, we headed to Carrabba's, to beat the dinner rush. That place is always busy, but luckily there wasn't a wait at 5:30!

On Saturday morning, I made blueberry pancakes with a blueberry syrup. They were very tasty. I used my strawberry pancake recipe, but substituted 1/2 whole wheat flour for the all-purpose flour, and blueberries for the strawberries. For the syrup, I used the rest of my fresh blueberries, some granulated sugar, some cornstarch (as a thickening agent), a splash of water and a splash of orange juice. The orange juice provided just the right amount of tartness to counter the sweetness of the berries and sugar. It was perfect.


We enjoyed some time outside that afternoon, since the sun finally decided to make an appearance after days and days of rain!! The boys enjoyed riding around in their new dune buggy, and I managed to slow down the tiny one for a pic. :) He is such a sweetheart!


On Sunday morning, I decided to use up some of the ingredients that were leftover in the fridge, so I threw together a frittata, using the rest of the cherry tomatoes from the Caprese skewers, and the green onion from the cranberry cream cheese crostini. Perfect! I had also bought an extra package of English muffins in case I wanted to make a double batch of crabmeat appetizers, so those made a good side, topped with some strawberry preserves. I hate wasting food since it is so darn expensive lately, so I was happy that I didn't have to throw out this stuff! I used my basic frittata recipe, just changing up what I added to the eggs, milk and cheese.


Sunday: Leftover chili with whole wheat spaghetti and shredded cheddar
Continuing the trend of cleaning out the fridge, we ate up the leftover chili we had. This time, we served it over the spaghetti (Cincinnati-style), topped with the cheese.

Monday: Crunchy chicken, pierogies, sautéed corn
I made this meal a few weeks ago for the first time in awhile, and it was gobbled up by everyone, so I'll make it again. I coat the chicken in egg, then a mixture of crushed cornflakes, paprika, salt and pepper, then bake it. I sauté the pierogies in a little butter, as well as the corn. :)

Tuesday: Beef stroganoff over egg noodles, steamed peas
I haven't made this meal in ages, and Josh requested it awhile back, so I'm finally getting to it. I basically use Betty Crocker's recipe, as that is the recipe my mom uses. It's tasty served over egg noodles. I wanted to sauté some snap peas in a little EVOO, but our local store didn't have any, so I'll steam some frozen peas, unless I stop by Fresh Market to pick some up in the morning.

Wednesday: Whole wheat Pizza pancakes, Caprese salad
I haven't made these in awhile, but the boys love them, so I'll make them this week. I'll be using sausage and pepperoni in them. I still haven't updated my original recipe, but I now make my own Bisquick, and also sub 1/2 whole wheat flour, too. On the side, hubby and I will have a Caprese salad - fresh mozzarella, tomatoes and basil, drizzled with a little balsamic vinegar. Light and delicious.

Thursday: Cream cheese chicken chili over rice
I've only made this one once, a couple of months ago, but it was good. I really liked how the rice sopped up all of the liquid, and it did help cut down a bit on the mess factor with the tiny one, too. :) Instead of using a dry packaged ranch dressing, I make my own. It's super easy, much cheaper, and no extra ingredients that you can't pronounce!

It is going to be a rough week getting back into a routine again and back to preschool for Ethan tomorrow. I'm hoping it goes better than I am expecting it to! Is everything back to "normal" at your house, too?
