Birthday Cake Pancakes

I first tried this yummy-sounding pancake recipe a couple weeks ago, for my birthday. It was such a hit with everyone that I decided to make more for Noah's birthday this past weekend. As you can see, they were a success with cousins Jacob and Rachel too!


I found the original recipe on the how Sweet it is blog. I made a few tweaks to it, so here's my recipe.

Birthday Cake Pancakes

Ingredients:
  • 1 1/2 cups all purpose flour
  • 1 cup white cake mix (it's my favorite flavor)
  • 2 Tbsp sugar
  • 3/4 tsp baking powder
  • Pinch of salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cup milk (add more if it appears to be too thick; I used 1% milk)
  • Sprinkles


Directions:
Combine the flour, cake mix, baking powder, sugar and salt in a bowl and mix until well blended. Add the milk, egg and vanilla extract and stir until smooth. You want the batter to look like regular pancake batter, so add more milk if it appears too thick. Fold in the amount of sprinkles you desire. The color will bleed into the batter, but it creates a fun tie-dyed effect. Alternately, you could wait and add the sprinkles to each pancake while cooking.

Preheat a skillet to medium to medium-low heat or an electric griddle to 300-350 degrees. Grease with a pat of butter or a quick spritz of butter spray. Pour batter in 1/4 cup measurements onto the skillet and let them cook until bubbles form on top, about 2-3 minutes. Flip them over and cook for 1 minute more. Serve with vanilla glaze. This recipe will make 10-12 pancakes.

Vanilla Glaze


Ingredients:
  • 1/2 cup powdered sugar
  • 1 Tbsp milk
  • 1/2 tsp vanilla extract
  • Pinch of salt
Directions:
Mix the sugar, milk, vanilla extract and salt until glaze forms. You may need to add more milk to reach the desired consistency. Drizzle on pancakes and serve while warm.



As I write this, I realize I didn't get any pics of the pancakes with the sprinkles. :( Oops! I guess I will have to update the pics later when I do. ;)
